You'll Need:
5ozs butter
1 cup sugar
1 cup water ,or sherry if preferred
1 teaspoon mixed spice
1 and a quarter cups plain flour
1 cup S R flour
1 lbs mixed fruit
4ozs glace cherries
2 eggs
one half teaspoon bicarb soda
2ozs chopped walnuts
Directions :
In a large pan combine butter water sugar spice and all fruit, except cherries Bring to the boil, then simmer for 3 mins let cool completely Beat eggs and add to fruit, then add bicarb soda ,mix well Add cherries and nuts, then add flour a bit at a time mixing well Grease and line an 8 inch tin with greaseproof paper, keeping paper about 2 inches above the sides of the tin Cook in a slow oven 130 c fan force oven for 3hours fruit and nuts can be varied to suit taste Once out the oven sit on a wire tray wrapping the whole tin in foil Before sealing cake in foil gently pour some brandy or whisky over cake, then seal with the foil and leave till cold then store in an air tight tin
